Ingredients:
- 2 ripe bananas, mashed
- 2 eggs
- 120g Greek Yoghurt / Skyr
- 100g Maple Syrup
- 80g coconut oil, melted and chilled
- 1 teaspoon vanilla extract
- 200g whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- pinch of teaspoon salt
- Optional: chopped nuts or dark chocolate chips
Instructions:
Start by mixing all your dry ingredients in a bowl.
In a separate bowl mix the mashed bananas with the maple syrup, yoghurt and the two eggs.
Once the wet ingredients are well mixed incorporate the dry stuff, be careful not to over mix at this stage.
As an optional step you can sprinkle some crushed nuts on top, I used crushed pistachios.
Line a loaf pan with baking paper, pour in the mixture, tap it a few times to ensure no air bubbles are left.
Put it to bake in a preheated 180C oven, for 50 to 60 minutes.
After baking, leave it to rest for at least 10-15 minutes before trying to cut it.
